Kinda Mom's Thai Noodles
This is my version of my mom’s Thai Noodles. They are a favorite of mine. I always make more than I need because the leftovers make a great lunch. Wonderful with grilled shrimp or chicken satay.
1 lb (16 oz.) linguini
1 cup of peanut butter, creamy or crunchy
½ cup soy sauce
¼ cup orange juice
1 tablespoon garlic powder
1-2 tablespoons cilantro (to taste), plus more to garnish
Hot sauce, any kind (to taste)
1 tablespoon sesame or olive oil
½ cup boiling pasta water
2 tablespoons crushed peanuts, to garnish (optional)
Cook pasta according to package instructions.
While the pasta boils, mix peanut butter, soy, orange juice, garlic, and hot sauce in processor or mix with mixer until blended.
Drizzle in oil while the mixture blends.
Dip a ½ cup measure into the boiling pasta to collect pasta water, slowly pour into sauce mixture to thin. You may not need the entire amount.
Taste the sauce and adjust any of the ingredients as needed until it is perfect for you.
Drain pasta when it is done and return to the pot.
Pour sauce over linguini and mix to evenly cover all linguini.
Either refrigerate and serve cold, cool to room temperature, or eat immediately.
If desired, top with chopped peanuts, sliced green onions, and a sprig of cilantro for an elegant look.
Serves 4 to 6.
