Easiest Peanut Butter Cookies



My sister wrote me an email asking for a peanut butter cookie recipe.  She doesn’t like cooking like I do, and so I gave her this recipe and she replied that I knew her well.  With just 4 ingredients, it cannot get much easier. If you like, you can use just one kind of sugar, bringing it down to just 3 ingredients, but I like the variety of the two sugars. This can also be done by hand, if you do not have an electric mixer, or don't feel like cleaning it. It can also be halved easily for a smaller batch.



2 cups peanut butter
1 cup white sugar
1 cup brown sugar
2 large eggs

Preheat oven to 350 degree F.
Prepare 3-4  cookie sheets with parchment paper.
Using an electric mixer, combine all ingredients until well mixed.
Roll into walnut sized balls by hand and place onto a parchment lined baking pans about an inch apart, pressing down to flatten.
Using a fork, press down vertically and then horizontally to create a crisscross pattern on top.
Bake for 8-10 minutes or until edges are golden. 
Remove from oven and allow to cool completely.

  3. It is really hard to say how much it makes. I usually make half a batch and have 2 trays, about 16-24 cookies, I guess depending upon the size. So a full batch should make up to 48 little cookies.
