Honey Mustard Chicken Salad

This would be great on a bed of  butter lettuce with bacon crumbled over.  Using mustard powder avoids the issue of prepared mustard that contains vinegar, which can have traces of yeast, or wine. Here it is pictured on a puff pastry roll.

1/3 cup mayonnaise
2 teaspoons mustard powder
1 teaspoon honey
¼ teaspoon lemon juice
¼ teaspoon salt
Pepper (to taste)
2 hard boiled eggs, chopped
2 cups grilled chicken, finely chopped
2 tablespoons red onion, minced

Mix together mayo, mustard powder, honey,  lemon juice, salt and pepper in a medium-sized bowl. 
Fold in eggs, chicken and onion, to coat well.
Refrigerate or serve immediately.
